1 tsp. tamari with a low sodium content (gluten-free soy sauce or soy sauce)
2 tablespoons of regular flour
Unsweetened oat milk or 3/4 cup (180 mL) canned “lite” coconut milk
1 tbsp. of tahini
1/9 cup nutritional yeast
a half-teaspoon of smoked paprika
12 teaspoon kosher salt plus more salt to taste
black pepper, freshly cracked, to taste
1/8 teaspoon coarse-grain or Dijon mustard
six ounces (170g) linguine, fettuccine, or your favorite type of pasta (including gluten-free)
optional accoutrements parsley leaves, roasted pine nuts, or cashew parmesan, chopped

INSTRUCTIONS :

Bring a big pot of salted water to a rolling boil. Al dente pasta should be prepared.
In the meantime, add the olive oil to a medium sauté pan and heat over medium-high heat. Add the onions and sprinkle with a little kosher salt after the oil is shimmering. Cook the edges until browned for 5-7 minutes, stirring periodically. For one minute, mix to blend the garlic and thyme until aromatic.
Pour the vegetable broth (or water), tamari or soy sauce, and flour into a measuring cup or bowl and combine while the onions are cooking. Until all the flour has been dissolved, whisk to mix. To ensure there are no flour clumps, add the vegetable broth and flour combination to the onion-garlic mixture and whisk to incorporate. It ought to start to thicken almost instantly. Pour in the coconut milk or oat milk, tahini, nutritional yeast, paprika, 1/2 teaspoon kosher salt, and black pepper to taste after lowering the heat to medium-low.
