Vegan Gluten-Free Sausage

When it comes to meat substitutes, I believe that ‘it doesn’t have to taste exactly the same to be delicious.’ This vegan sausage recipe combines beans, nuts, oats, and a variety of seasonings to make a delicious vegetarian sausage that isn’t attempting to imitate meat, but doesn’t need to when it tastes this good.
In my opinion, this recipe is everything a veggie sausage should be: hearty, healthy, and flavorful! It’s amazing what a combination of white beans, walnuts, oats, and seasonings can do to make a meatless sausage.
Furthermore, unlike most other vegan recipes, this one does not contain wheat gluten. This makes it completely safe for people who are gluten intolerant!

This vegetarian sausage recipe is also extremely adaptable, allowing you to adjust the seasonings to your liking and even swap out ingredients for dietary needs, such as swapping the nuts for seeds. Do you want spicier or smokier sausages? – Not a problem!
And, of course, they taste great anywhere you’d use any other sausage. Serve as a vegan hot dog, on a grill, in wraps, with mash, and so on. In fact, there are so many possibilities that we’ve included a list of potential serving ideas in this video if you’re looking for some inspiration.

Making the Best Vegan Sausage

The recipe is as simple as blending, forming, steaming, and frying! Depending on your preferences, you can even cook these veggie sausages in a variety of ways.

In a small bowl, combine the ground chia seeds and 14 cup water and set aside for five minutes to thicken. If you don’t have ground chia seeds, you can grind them yourself for a few seconds in an electric spice/coffee grinder or blender.

Meanwhile, thoroughly rinse the canned white beans in a sieve, then drain and pat dry with a paper towel.

In a food processor or blender, combine the oats and walnuts. Only pulse the machine rather than running it continuously because you want the ingredients to retain texture rather than turning into ‘flour.’

Add the remaining ingredients to the food processor/blender and pulse to combine.

Form 6-7 sausages with your hands. If the mixture is too sticky, a sprinkle of oat flour should help. Place the vegan brats on a dish lined with parchment paper and refrigerate for 20 minutes.

Wrap each sausage in parchment paper and tin foil, twisting the ends like a candy wrapper. Place in a steamer basket/pan and steam for 35 minutes.

After cooking, serve immediately, pan-fry, or grill for a crispy result! A vegan sausage casing could also be used.

Pan-Frying Technique:

Brush the sausages with a little oil on each side before placing them in the preheated skillet. Lightly fry for 7-10 minutes, turning once or twice, until lightly browned, and serve!

For sausages that can withstand grilling:

Allow the sausages to cool to room temperature after steaming. Refrigerate for a few minutes to firm up before grilling. This method allows them to keep their firm texture and not fall apart on the grill.

Casing for Vegan Sausage

This step is entirely optional, but rice paper sheets can be used to make a sausage casing!
Yes, the same ingredient that is used to make delicious summer rolls/spring rolls can also be used to make an excellent vegan sausage casing.
When fried, rice paper sheets completely change texture and add a delicious light crisp. Furthermore, rice paper wrappers are gluten-free! That is, this will continue to be a gluten-free vegan sausage to accommodate a variety of dietary requirements.

You can use either white rice paper or brown rice paper wrappers, which will affect the appearance and, to a lesser extent, the taste of the sausages.

How to Create a Casing

As previously stated, follow steps 1-6.
To make the casing, fill a large bowl halfway with lukewarm water. Dip a rice paper sheet into the water for 5 seconds at a time, allowing excess water to drip off. The sheet should then be placed on a cutting board lined with oiled parchment paper.

Place a steamed sausage on a damp ripe paper sheet and fold it over once, then fold the sides in and roll it up like a cigar. Continue with the remaining sausages.

Preheat a large skillet to medium-high heat. Brush each side of the sausages with a little oil before adding to the pan. Cook for 7-10 minutes, turning every minute or so, until heated through.

What To Serve

If you want to serve these in the’vegetarian bratwurst’ style, make a sandwich or vegan hot dog in a bun. Add mustard, onions, and a variety of other toppings and sides.
German Sauerkraut, Potato Salad, and this Keto Coleslaw are some of my favorite side dishes to serve with vegetarian brats.

These veggie sausages are also suitable for breakfast and brunch dishes. For example, alongside Vegan Scrambled Eggs and other breakfast favorites.

You could also slice and serve with salads and pasta, on top of pizza, or make a vegan casserole dish, among many other possibilities!

How to Keep

Refrigerate any leftover vegan sausages in an airtight container for up to six days.

Notes and Variations on the Recipe
You have the option of using canned beans or soaking and cooking dry beans.
You could also vary the type of bean you use.
Replace the walnuts with your favorite nut or seed, such as sunflower seeds or pumpkin seeds.
You could also substitute breadcrumbs for the oats. Buckwheat groats should also be fine.
Adjust the seasonings to your preference. Add some crushed chili or cayenne pepper for extra heat. Add a few drops of liquid smoke for more smokiness.

You could add some sun-dried tomatoes alongside the tomato puree for even more vegan Italian sausage flavor.
